They cultivate white grape varieties Macabeo, Xarel.lo, Parellada, Chardonnay and Subirat Parent and the reds Cabernet Sauvignon, Merlot, Pinot Noir and Syrah. \u00a0\u00a0Torell\u00f3 wines and cavas are made with one principal objective: caring for the vines with rigour and passion, to guarantee quality. For this reason the production of vines via winter pruning and the green harvest in the summer is limited. The grapes are transported from the vines to the presses in less than 15 minutes thus avoiding oxidation and\/or spontaneous fermentation.\u00a0\u00a0 All of the grapes are passed across the selection table, bunch by bunch.\u00a0\u00a0 We tasted two wines and three Cavas. \u00a0\u00a0The cost of each wine, where it can be purchased and average score given by members is shown in the list of wines tasted in 2016, which can be found by\u00a0clicking on\u00a0<span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.cbws.eu\/archive\/wines-tasted-in-2016\/\">\u201cWines tasted in 2016\u201d.<\/a><\/span><\/span><\/p>\n<p><span style=\"color: #000000;\">The first wine was <strong>Crisalys blanco<\/strong> 2015 made from 50% Xarel lo and 50% Chardonnay. Harvesting took place on 12 September when the grapes reached the desired degree of maturity, and in boxes of 25 kg.\u00a0were transported to the winery, where they underwent a rigorous selection table to select only the best grapes.\u00a0 The wine undergoes 12 hours of maceration and is aged for 3 months with its lees and batonnage (stirring).\u00a0 The fermentation was carried out in new French and American oak barrels of 225l.\u00a0at controlled temperature (16-17\u00ba C) for nearly two months. \u00a0A young white wine, fresh, light and fruity, with an Alcohol by Volume (ABV) of 13.5%, it receives 89 points in the Gu\u00eda Pe\u00f1\u00edn.<\/span><\/p>\n<p><span style=\"color: #000000;\">This wine was followed by a 2015 rosado <strong>Petjades <\/strong>a 100% <strong>\u00a0<\/strong>Merlot from their vines at Can<\/span><\/p>\n<div id=\"attachment_4920\" style=\"width: 288px\" class=\"wp-caption alignright\"><a href=\"http:\/\/www.cbws.eu\/archive\/17th-november-ca-la-iaia-moraira\/img_0024\/\" rel=\"attachment wp-att-4920\"><img aria-describedby=\"caption-attachment-4920\" loading=\"lazy\" class=\"size-medium wp-image-4920\" src=\"http:\/\/www.cbws.eu\/archive\/wp-content\/uploads\/2016\/11\/IMG_0024-278x300.jpg\" alt=\"Paco Torell\u00f3 introducing the wines\" width=\"278\" height=\"300\" srcset=\"http:\/\/www.cbws.eu\/archive\/wp-content\/uploads\/2016\/11\/IMG_0024-278x300.jpg 278w, http:\/\/www.cbws.eu\/archive\/wp-content\/uploads\/2016\/11\/IMG_0024-400x431.jpg 400w, http:\/\/www.cbws.eu\/archive\/wp-content\/uploads\/2016\/11\/IMG_0024.jpg 445w\" sizes=\"(max-width: 278px) 100vw, 278px\" \/><\/a><p id=\"caption-attachment-4920\" class=\"wp-caption-text\">Paco Torell\u00f3 introducing the wines<\/p><\/div>\n<p><span style=\"color: #000000;\">Mart\u00ed.\u00a0 Fermentation is in stainless steel vats at controlled temperature. After decanting it is maintained at 10\u00baC, clarified and filtered and aged for<strong>\u00a0<\/strong>3 months with its lees and batonnage.\u00a0 It has a raspberry colour with a violet edge and an aroma of wilted flowers.\u00a0\u00a0 You can also notice the red and ripe fruit.\u00a0\u00a0 In the mouth it is powerful with a fruity flavour and good acidity.\u00a0\u00a0 The ABV is 13.5%<\/span><\/p>\n<p><span style=\"color: #000000;\">Then came the first Cava <strong>Torell\u00f3 P\u00e0l.lid<\/strong> a 2014 rosado Brut Reserva.\u00a0 Produced by pressing together white (75%) and red (25%) rapes (Xarel lo and Pinot Noir) it undergoes<strong>\u00a0<\/strong>soft pressing to obtain free-run juice. Secondary fermentation takes place in the bottle and it has a minimum of 24 months aging in racks.\u00a0\u00a0 The colour is a very pale blush with copper notes. \u00a0 In the mouth it is dry and it has an average persistence. \u00a0\u00a0The ABV is 11.5%\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\">The second Cava was <strong>Torell\u00f3 Brut Special Edition 2011<\/strong> blended from<strong>\u00a0<\/strong>Macabeo, Xarel.lo and Parellada from the vines in Can Mart\u00ed. Harvested manually\u00a0<span style=\"letter-spacing: 0.05em;\">the production involves soft pressing to obtain free-run juice. Secondary fermentation takes place in the bottle and it has a minimum of 24 months aging in racks. \u00a0 The bottle label covers the whole bottle a tells a story in pictures and words of the history of the bodega and includes the vineyards coordinates on the neck. \u00a0 Bright, pale straw in colour with lime hints. Very dey with white fruit aromas, like ripe apple, pear and melon. \u00a0It has a velvety texture with fine and persistent bubbles with good acidity and an ABV of 12%.\u00a0\u00a0 The Gu\u00eda Pe\u00f1\u00edn gives it 90 points<\/span><\/span><\/p>\n<p><span style=\"color: #000000;\">Finally we tasted <strong>Torell\u00f3 Brut Nature Gran Reserva 2010<\/strong> a blend of Macabeo, Xarel\u00b7lo and Parellada which is harvested and produced like the other Cavas we tasted, but spends a minimum of 36 months aging in stacking racks and 24 months in bottle.\u00a0 This is among the top 10 most highly rated Cava wines (based on critic scores)<strong> \u00a0\u00a0\u00a0<\/strong>It has a pale golden yellow colour with green reflections.\u00a0 On the nose there are aromas with notes of butter and toasted bread with background of ripe fruit.\u00a0\u00a0 On the palate it is broad with well integrated carbon and has a long and persistent finish.\u00a0\u00a0 It has an ABV of 11.5%.<\/span><\/p>\n<p><span style=\"color: #000000;\">As Paco had to leave for another appointment in Alicante (it was now 22.00!)
